Butterscotch Haystack Cookies

Crunchy and sweet, these no-bake butterscotch cookies are always a hit. Store in an airtight container or in the freezer.
ingredients
2 packages (11 ounce size) butterscotch chips
1 package (10 ounce size) chow mein noodles
2 cups salted peanuts, optional
directions
Heat a double boiler over hot, not boiling, water. Add the butterscotch chips and cook, stirring occasionally, until melted.
Carefully remove the top of the double boiler and place it on a heat-proof surface or trivet.
Stir the chow mein noodles and peanuts into the melted butterscotch.
Drop the butterscotch haystacks onto waxed paper by spoonfuls and let set until firm. Store the haystack cookies in an airtight container. These cookies can also be frozen.

I occasionally bring in homemade treats for my coworkers. Since it's autumn now, I thought these easy-to-make "haystacks" would be appropriate and a nice change from the usual cookies. They went over pretty well, I would say!
