1 box (18.25 ounce size) yellow cake mix, plus ingredients to prepare
1 package (3 ounce size) vanilla pudding mix
1 can (21 ounce size) cherry pie filling
directions
Bake cake as directed on package for a 2 layer cake. Cool completely.
Prepare pudding as directed on package and chill. Spread pudding between cake layers. Top cake with cherry pie filling. Serve with whipped cream if desired.

This is one of my backup desserts. I keep cake mix, pudding, and pie filling on hand just for this. Super easy and it goes over very well with everyone.
