ingredients
1 box (18.25 ounce size) white cake mix
1 box (3 ounce size) instant pistachio pudding mix
1 cup vegetable oil
1 cup club soda
3 eggs
1/2 cup chopped pecans
3 drops green food coloring
ICING
1 box (3 ounce size) instant pistachio pudding mix
1 small package cool whip frozen non-dairy whipped topping
1 1/4 cup milk
directions
Preheat oven to 350 degrees F.
Mix all ingredients, folding in pecans last. Beat 2 minutes on medium speed.
Pour batter into greased and floured tube pan and bake 45 minutes, until toothpick comes out clean. Allow cake to cool completely before removing from pan.
To make icing, whip pudding mix, Cool Whip and milk until smooth. Spread on cool cake.
