- #45917

1-2 hrs
ingredients
1/2 cup butter, cut up
3/4 cup milk
1 1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3 large eggs, at room temperature
1 1/4 cup granulated sugar
1 tablespoon vanilla extract
3/4 cup Lemon Glaze
directions
Preheat the oven to 350 degrees F. Butter an 11 x 7-inch baking pan. Place the butter and milk in a small saucepan over low heat, stirring until the butter has melted. Cool to room temperature.
Sift the flour, baking powder, and salt into a medium bowl. Beat the eggs, sugar, and vanilla in a large bowl with an electric mixer at medium speed until pale and thick. With mixer at low speed, gradually beat in the dry ingredients, alternating with the milk mixture.
Spoon the batter into the prepared pan. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean. Cool the cake completely in the pan on a rack. Drizzle with the glaze.

They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
