It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

ingredients
2 ounces unsweetened chocolate, melted and cooled
1/2 cup shortening
1 can (6 ounce size) frozen unsweetened apple juice, thawed
2 eggs
1 cup all-purpose flour
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon baking powder
3/4 cup milk
directions
Preheat the oven to 350 degrees F. Grease an 8 or 9 inch round cake pan.
Combine all the ingredients in a mixing bowl and beat on low speed with an electric mixer until combined. Transfer the cake batter to the prepared cake pan.
Place the pan in the oven and bake at 350 degrees F for 30 minutes or until done.
Remove the pan from the oven and let cool in the pan for 5 minutes then invert the cake onto a cooling rack and let the cake cool completely before icing or storing. Store the cooled cake in an airtight container.
