It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Roll
1 cup flour, unsifted
3 eggs
1 cup dates, chopped
3/4 cup nuts
1/4 cup sugar
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon allspice
Filling
2 packages (3 ounce size) cream cheese
4 tablespoons oleo
1/2 teaspoon vanilla extract
1 cup confectioners' sugar
directions
For Date Nut Roll: Combine chopped dates, 1/4 cup sugar, 1 cup water and 1/2 teaspoon salt. Cook 4 minutes. Set aside to cool.
Beat eggs 5 minutes on high. Add 1/2 cup sugar to eggs.
Sift flour, baking powder and allspice. Add to egg mixture. Next, add cooked and cooled date to mixture to egg batter. Pour into jelly roll pan.
Bake 15 minutes at 350 degrees F.
Turn onto towel sprinkled with powdered sugar. Roll up and cool.
For Filling: Cream all ingredients until smooth. Spread on unrolled cake and reroll.
