1 cake dry yeast
1/4 cup lukewarm water
1/2 cup mashed potatoes
1/4 cup shortening
1 1/2 teaspoon salt
1/4 cup sugar
1 cup milk
1 egg
4 cups flour, more if needed
Add yeast to water.
Combine potatoes, shortening, salt, sugar and milk. Add yeast mixture and egg.
Stir in half the flour gradually, then add remaining flour. Knead on bread board for 8 to 10 minutes. Let rise until double in size in a warm place.
Punch down and shape into balls. Let rise 10 minutes more, then shape into rolls. Let rise until double in size.
Bake at 375 degrees F for 15 to 25 minutes.
