Cloverleaf rolls are a classic-shaped roll (think three-leaf clover) that are still popular today. This version cuts down the work by starting with frozen bread dough instead of making the dough from scratch.

1/4 cup salted butter, melted
1 tablespoon finely chopped fresh parsley
1 1/2 teaspoon finely chopped fresh rosemary
1 1/2 teaspoon finely chopped fresh thyme leaves
1 loaf (1 lb. size) frozen bread dough, thawed

directions

Combine the melted butter, parsley, rosemary, and thyme in a shallow bowl or plate.

Set out a muffin tin but do not grease it.

Cut the thawed bread dough into 1-inch pieces (you'll need three per roll) using a kitchen scissors. Shape each piece into a ball and then roll in the herb mixture. Place 3 of the coated balls into each muffin cup.

Place a damp dish towel over the muffin tin and place in a warm, draft-free place. Let the dough rise until doubled in size (about 30-40 minutes).

While the dough is rising, preheat the oven to 400 degrees F.

Place the muffin tin (remove the towel!) in the oven and bake at 400 degrees F for 15-20 minutes or until rolls are light golden brown. If you want softer rolls, brush them with milk or butter just as they start to brown. For a shiny crust, brush them with beaten egg white mixed with water before baking.

Remove the muffin tin from the oven and let the rolls cool for 1 minute then serve warm. Or, cool completely before storing in an airtight container.
