4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
1 cup chopped onion

directions

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight.

OVEN BAKING INSTRUCTIONS: When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan. Roast, uncovered, at 250 degrees F for 5 hours. After the first hour, baste chicken occasionally (every half hour or so) with pan juices. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let chicken rest about 10 minutes before carving.

CROCK POT INSTRUCTIONS: Stuff the chicken with the onions; place in the crockpot and set to Low all day long. You can make gravy from the juices if you want.

    Excellent recipe! The unusual combination and proportion of spices are perfect for long-term cooking. The result is a full-flavored, zesty and spicy dish, even after cooking for ten hours. The flavors meld together to create a deliciously mellow yet punchy chicken. The paprika and cayenne added nice color to the dish. I did the crock pot method, and the resulting juices were amazing. Since there was no liquid added, the juices were the pure, tasty essence of the chicken and the spices. I simply poured the juices into a narrow, deep container, popped in the freezer, allowed the fat to rise, then skimmed it off, leaving the good stuff to pour over the chicken and rice I served it with. I actually used a whole chicken cut up, allowing the spice mixture to cover more surface area, and also facilitating easier removal from the crock pot, as it was literally falling off the bones. My partner thought it was a bit salty and hot, so I may reduce the salt and cayenne next time. (But he's picky!) This was an excellent recipe, and I can't wait to try it in the oven! Perfect for a busy day, this only needs a simple starch accompaniment and a green salad.
