Add some flavor to your weeknight dinner routine. The chicken pieces are cooked in a flavorful tomato and pepper sauce, with just a hint of heat from the jalapeno peppers.

4 pounds chicken, cut into 8 pieces
1 tablespoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
2 cups chopped onions
3 cups sliced bell peppers (a mix of red, yellow, and green)
2 tablespoons finely chopped jalapeno peppers
1 tablespoon minced garlic
1/2 pound prosciutto, thickly sliced, cut into 1-inch strips
1 can (28 ounce size) diced tomatoes, drained
2 tablespoons coarsely chopped fresh basil
Season the chicken with salt and pepper.
Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and cook, 3-5 minutes per side, until browned. Remove the chicken and set aside.
Drain all but 1 tablespoon of the oil from the skillet. Reduce the heat to medium and add the onions. Cook, stirring occasionally, for 3-5 minutes. Add the bell peppers, jalapeno, and garlic. Cook for 5 minutes or until soft.
Stir the prosciutto, tomatoes, and basil into the skillet. Add the chicken pieces.
Reduce the heat to a simmer. Cover the skillet and let the chicken cook for 30-40 minutes or until cooked through. Turn the chicken pieces occasionally during the cooking time.
Serve hot.

Made this for dinner tonight and it was delicious! It's not hot hot hot spicy but it has a great kick of flavor (dpends on the jalapeno peppers you use I suppose). The meal was easy and everyone loved it. I will make this again for sure!

This was good, and just fine for an ordinary family dinner. But I'm from Texas, and this didn't really qualify as "spicy" to me. The bit of jalapeno in it accounts for most of that billing, I suppose. Still, I might make this again sometime but I wouldn't serve it to houseguests.
