ingredients
1 chicken, cut up
1/3 cup green olives with pimento
2 tablespoons capers
1 teaspoon oregano
1 lime or lemon, juice only
4 tomatoes, seeded and chopped
1 pinch saffron
1 cup chicken stock
1/2 cup white wine
1/3 cup olive oil
5 cloves garlic, mashed
1 large onion, chopped
1 large bell pepper, chopped
1 jalapeno pepper, seeded and minced
salt and pepper, to taste
directions
Brown the cut up chicken in the olive oil. Drain off the excess olive oil, and remove the chicken.
Add the garlic, onion, capers, olives, oregano, bell pepper, saffron, and citrus juice. Saute for about 5 minutes, then add the remaining ingredients with salt and pepper to taste.
Replace the chicken and simmer uncovered for 30-35 minutes or until chicken is tender Serve with hot rice.
