Slow Cooker Poached Chicken

ingredients
3 pounds broiler-fryer chicken
salt and pepper
1 stalk celery, diced
1 carrot, sliced
1/2 onion
1 cup chicken broth
1 bay leaf
directions
Wash chicken inside and out. Place in crock pot and sprinkle with salt and pepper. Add giblets if desired.
Place celery and carrots around chicken. Pour broth over all and add bay leaf.
Cover and cook on low for 8 hours. Remove chicken from crock pot. Remove meat from bones. Strain stock.
