Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

4 tablespoons butter or margarine
1 cup raw rice
1 can (10.5 ounce size) condensed cream of mushroom soup
1 can (10.5 ounce size) condensed cream of celery soup
3/4 cup undiluted evaporated milk
3 pounds whole frying chicken (cut in pieces)
1 envelope (1.375 ounce size) onion soup mix
directions
Melt butter or margarine and combine with rice, mushroom and celery soup and evaporated milk. Spoon into a 7- x 11-inch baking dish or casserole with cover.
Arrange chicken pieces over rice and soup mixture. Cover tightly with aluminum foil or cover in casserole dish. Bake in a slow oven (300 degrees F) for 2 1/2 hours. Do not uncover until ready to serve.
To reheat, add a little more evaporated milk and reheat in a slow oven about 15 minutes.
