A beautiful one-pot chicken dinner. Chicken cooked in bacon grease along with potatoes, carrots, and onions fills this sensational skillet all the way up.
4 slices bacon
5 pounds chicken pieces, can use a mix or all legs
12 small white potatoes, scrubbed (cut in half if large)
2 large white onions, chopped
6 large carrots, peeled and sliced lengthwise and then in one-inch pieces
salt and pepper, to taste
Preheat oven to 350 degrees F.
Brown the bacon in a heavy skillet (cast iron works great). Remove from the pan and place on paper toweling to drain. Drain all but 1 tablespoon of the bacon grease. Crumble the bacon when cooled.
Add the chicken and brown it on all sides in the bacon grease. Add the bacon back to the skillet. Nestle the onion, potatoes, and carrots around the chicken pieces so everything is in a single layer if possible.
Cover the skillet (with a lid or foil), place in the oven, and bake at 350 degrees F for 1 1/2 hours or until the chicken is cooked through. Remove lid from skillet and bake the chicken an additional 15 minutes.

I wanted to give this a 5 as my family did eat it (if they eat it, it gets a 5). The presentation is marvelous and the smell of the onions, potatoes and bacon in the house were great! The only thing to change is to add whatever salt seasoning you prefer to the veggies once you put them on the chicken. The veggie mixture was bland which DH pointed out to me before I had a chance to taste it. I did season my chicken as it was browning and the bacon drippings give it a wonderful flavor, it flavors the veges too but not as much as that chicken cooking in bacon grease :)! Despite the bland taste of the veges (will season them going forward), this will go into my monthly rotation and thank you for sharing it!
