Creamed Cold Chicken Curry

ingredients
1 large onion, diced
3 ounces butter or margarine
1 tablespoon curry powder
2 tablespoons plain flour
1 1/4 pint chicken stock
2 steamed chickens
2 tablespoons apricot jam
1/2 jar mayonnaise
1/2 pint cream
lemon juice
black pepper
salt
directions
Fry onion in butter and curry powder in large saucepan. Add flour and cook 1 minute. Slowly add chicken stock stirring all the time. Bring to boil and after adding apricot jam simmer for 10 minutes. Strain.
When cold add mayonnaise and cream. Adjust seasoning with lemon juice, salt and pepper. Gently mix through 2 chickens cut into bite sized pieces. Store covered in fridge for at least one day to allow flavors to develop.
