1 egg
3/4 cup granulated sugar
3/4 cup evaporated milk, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons evaporated milk
1 tablespoon lemon juice
2 1/2 tablespoons orange juice
2 teaspoons orange zest
3 cups sifted flour
1/4 teaspoon salt
1 teaspoon baking soda
confectioners' sugar
vegetable oil for deep-frying

In a large bowl, crack 1 egg and gradually beat in 3/4 cup granulated sugar. Add 3/4 cup plus 2 tablespoons of evaporated milk, 1 tablespoon lemon juice, 2-1/2 tablespoons orange juice and 2 teaspoons orange zest. Mix to blend and set aside.
In another bowl, combine 3 cups sifted flour, 1/4 teaspoon salt, and 1 teaspoon baking soda. Gradually beat into wet ingredients, just until dampened. Do not over mix. Heat vegetable oil in large saucepan to 370 degrees. Using 2 teaspoons, drop small amounts of batter into hot oil and fry for 4 to 5 minutes until golden brown.
As always, when using hot oil, be sure to use extreme caution. Drain on paper towels. Place puffs on plate and sprinkle with confectioner's sugar. Serve and enjoy.
