Bagels with a kick! They have a mild jalapeno flavor that can be adjusted to your tastes and a good dense texture without being too chewy.
1 3/4 cup lukewarm water
1/2 teaspoon dry yeast
2 teaspoons salt
1 1/2 tablespoon sugar
5 cups flour, more if needed
1/3 cup jalapenos, chopped
1/4 cup dried red peppers
Mix water, yeast, salt and sugar. Add flour and jalapenos and mix into a ball. Knead for 10 to 12 minutes, adding more flour if necessary, until dough is stiff. Add red peppers and knead for 3 minutes. Let dough rest 10 minutes, then cut into 12 pieces with a knife.
Roll each piece of dough on a table to form long cigar-like shapes. Then, for each of the twelve pieces, connect the two ends by overlapping them about 3/4 of an inch and rolling the ends together to make a ring shape. Make sure each joint is secure or it will come apart while boiling.
Cover with a damp towel and let rise 1 to 1 1/2 hours in a warm spot. In a large pot, bring 1 to 2 gallons of water to a rolling boil. Place bagels in boiling water and boil until they float (15 to 30 seconds). Remove with a slotted spoon and place on a lightly greased cookie sheet. Bake at 400 degrees F for 10 to 15 minutes or until golden brown.

AMAZING bagels! I was hesitant on how they would turn out as they use less yeast than I am used to using, but I wouldn't change a thing! I added in some cilantro and dried herbs and I think it really pulled out the smoky taste of the jalapeños and dried red pepper! Most definitely putting this into my regular bagel baking rotation!

Never made bagels until now. Used roasted and peeled Hatch green chiles from New Mexico instead of the dried red peppers. Also, because I like hot peppers, I used more jalapenos than the recipe called for and added shredded cheddar cheese too!. Had to add a little extra flour to stiffen up the dough after I added the chiles. The best bagels I've EVER had!! I amazed even myself!!

The bagels came out good. Thanks for the recipe The bagels were not hot - would add more jalapenos next time. Also, it did not turn golden brown even after 20 min in the oven.

I love jalapeno bagels, and this recipe was very easy and tastes very smooth. Mild jalapeno taste, and the consistency of the bagel was very nice. A little on the light side, even after baking for just over 15 minutes. Next time I'll try it with some more salt and jalapeno juice. Overall, YUMMY!!!

The jalapeno flavor is subtle, we actually added more jalapenos for added heat :) Our bagels never really got golden brown in the oven, but they were really good. The texture was a dense bagel, but not overly chewy or coarse.
