Black And White Cheesecake Bars

ingredients
Crust
12 ounces chocolate chips
1/2 cup butter
2 cups graham cracker crumbs
Filling
8 ounces cream cheese, softened
1 can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
directions
Preheat oven to 325 degrees F.
In a medium saucepan, over very low heat or in a microwave on Power 6 melt the chocolate chips and butter. Stir until smooth.
Stir in the graham cracker crumbs. Reserve 1/4 cup of crumb mixture and press rest in a 13" x 9" baking pan.
In a large bowl with electric mixer, beat cream cheese until smooth. Gradually beat in the condensed milk, then the egg and vanilla.
Pour the mixture over prepared crust. Sprinkle with reserved crumbs and bake at 325 degrees F for 25-35 minutes until set.
Cool completely to room temperature on a wire rack, then refrigerate for 2 hours or longer. Cut into squares.

These bars were a real hit. I topped them with raspberry sauce before serving - delicious!

These are great! My only suggestion would be to bring them to room temperature before you try to cut them into squares. And I think the next time I make them I will double the amount of cheesecake to make them thicker!

I concur with the other reviewers: these bars were very good, especially considering that they are quite easy to make. I used the basic recipe the first time I made them and have subsequently experimented successfully with variations, including a thicker cheesecake layer and other ways (besides dotting with the crust mixture) to dress up the tops. This is one quick item for a potluck or party that will definitely get positive attention.

I first made these bars for a special event in my workplace. I do not exaggerate when I say people raved about them! I have shared the recipe with many since then. I now receive special requests for these bars whenever we have something to celebrate in the office.

I made this for the 1st time yesterday! It is DELICIOUS! After pouring the mixture onto the chocolate crumb bottom, i just sprinkled with whole chocolate chips!! Came out great!!! It was quick & easy to make!

This recipe is easy to make and fancy enough to serve at a party. I used half semi-sweet/half milk chocolate chips in the crust, which worked fine. Instead of crumbs, I sprinkled the top with grated chocolate (leftover chips I pulverized in the food processor). My guests raved about these bars!

This is VERY rich and delicious! I made these for a Christmas dessert and the whole pan was gone in 24 hours! The only thing I would change is to use less crust/more filling. I guess you could do it in a smaller pan to acheive that, but the baking time would probably need to be changed a bit. Easy recipe!
