Original Mexican Capirotada

ingredients
4 bolillo breads, sliced into rounds
OR
1 large baguette, sliced into round pieces
4 cups sugar
2 cups water
1 cup unsalted peanuts
1 cup raisins
1 cup fresh cheese, chopped in squares
1 cinnamon stick
1/2 cup chocolate chips
nonfat cooking spray to fry
directions
Boil the sugar and cinnamon in the water to form a syrup.
Fry the slices of bread or baguette in a pan with cooking spray, until the bread looks crispy. Retire from the pan and place them in a kitchen paper napkin so they can be free of fat.
In a good sized pot, place some slices of bread (not all of them) and add a little of the peanuts, raisins and cheese, then continue with another layer of bread slices and go on until everything finishes. Pour the syrup you made before over and mix very smoothly.
Place the pot in a bath of hot water (bain marie) and simmer for half an hour. Let the dessert cool and place at the center of the table and let everyone serve.
