ingredients
1 package (10 ounce size) frozen chopped spinach, thawed
1 pound process cheese with jalapeno peppers, cubed
1/2 cup milk
1 small onion, diced
1 jar (20 ounce size) diced drained pimiento
1 tomato, diced
directions
Squeeze spinach until barely moist; set aside.
Combine cheese, milk, onion and pimiento in top of double boiler. Bring water to a boil. Reduce heat to low and cook until the cheese melts. Add spinach and tomato, stir well.
Serve warm with tortilla chips.
