Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
1/4 cup margarine
1 cup brown sugar
1 cup coconut
1 egg, beaten
3/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
Icing
1/4 cup margarine
1/2 cup brown sugar
2 tablespoons milk
1 cup powdered sugar
directions
Melt margarine; remove from heat. Add sugar and stir. Add rest of ingredients and stir well.
Spread into greased 9" x 9" pan. Bake about 25 minutes at 350 degrees F or until medium brown; cool.
Combine margarine and sugar in pan. Add milk and bring to a boil for 2 minutes; cool (Set pan in cold water and stir).
Add powdered sugar and beat. If it's too stiff, add a bit more milk until soft enough to spread. Smooth over bars. Cut into squares.

This recipe is originally from the Company's Coming Squares & Bars Cookbook. Use butter(not marg!). I always make this when doing a squares platter for those who are not fans of chocolate or lemon squares. Always a hit.
