ingredients
2 tablespoons oil or bacon fat
1 medium onion, diced
1/2 teaspoon minced garlic
1 medium green bell pepper, seeded and diced
1 tablespoon diced jalapeno pepper
1 medium tomato, diced
1/2 teaspoon ground cinnamon
1 can pinto beans (with liquid)
1/4 teaspoon dried epazote
directions
Heat the oil in a heavy, medium-sized saucepan over medium heat. Add the onion, garlic, and bell pepper. Cook, stirring, for 3-4 minutes or until the onion begins to soften.
Stir in the jalapeno, tomato, cinnamon, beans, and epazote. Mix well. Reduce the heat to low, cover the saucepan, and let simmer for 20-25 minutes.
Serve the beans warm.
