Tex-Mex Pinto Beans

These Tex-Mex style pinto beans are a delicious and easy to make dish that is full of flavor.

ingredients
2 pounds dry pinto beans
water
1/4 pound salt pork, chopped
1/4 cup chopped fresh cilantro
4 jalapeno peppers, seeded and diced, or to taste
7 cloves garlic, finely chopped
2 medium onions, finely chopped
1 tablespoon salt, or to taste
3 tablespoons chili powder, or to taste
1 tablespoon ground cumin
2 teaspoons dried oregano
directions
Soak the pinto beans in cold water overnight. Drain well.
Place the soaked pinto beans in a large pan. Add just enough water to cover the beans by an inch.
Add the salt pork, cilantro, jalapenos, garlic, onions, salt, chili powder, cumin, and oregano to the pan. Bring the pinto beans to a boil over medium-high heat. Reduce the heat to low and let the pinto beans just barely simmer for 2-4 hours or until tender. Make sure the liquid doesn't completely cook off during the cooking time, add more water as needed.
Adjust the seasoning of the Tex-Mex pinto beans and serve hot.
