ingredients
2 cups dried pinto beans, soaked
5 1/2 cups chicken broth
1 onion, chopped
1/4 cup green onions, chopped
2 teaspoons garlic, minced
1 jalapeno pepper, chopped
2 teaspoons vegetable bouillon granules
1 1/2 teaspoon cumin
2 teaspoons chili powder
2 tomatoes, diced
1/4 cup cilantro, chopped
directions
Combine all ingredients except for the tomatoes, green onions, and cilantro in a 4-quart pot. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 80-100 minutes.
Add the tomatoes to the bean mixture, and cook for 20-30 more minutes. Top each serving with cilantro and green onions. Also good with rice.
