Southwestern Pinto Beans

ingredients
1 package (16 ounce size) pinto beans
6 cups water
1/2 pound bacon, cut up
2 cups chopped onions
3 cloves garlic, minced
2 cans (8 ounce size) tomato sauce
3 tablespoons chili powder
1/2 teaspoon oregano leaves
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cumin
directions
Rinse beans well. Soak overnight in the water; do not drain. Cover; simmer beans for 3 to 3 1/2 hours until tender.
In larger skillet, cook bacon, onions and garlic over medium heat until bacon is crisp. Do not drain.
Add bacon mixture, tomato sauce, chili powder, oregano, salt, pepper and cumin to beans. Stir well. Simmer, uncovered another 20 to 30 minutes.

These are good as a main dish. They can also be used as a burrito filling, or can be served over cooked white rice and topped with your favorite shredded cheese.
