Pinto Beans With Oregano And Minced Vegetables

ingredients
1 medium onion, minced
1 medium carrot, minced
2 cloves garlic, minced
1 tablespoon canola oil
2 serano chilies, stems and seeds discarded, minced
1 tablespoon dried oregano leaves
3 cans (15 ounce size) pinto beans
1 can (15 ounce size) tomatoes, chopped, juices reserved
1/2 cup minced roasted red bell pepper
1/2 cup minced fresh parsley
salt and pepper, to taste
directions
In a large pot over medium heat, saute onion, carrot, and garlic in oil for 5 minutes. Stir in chilies and half of the oregano. Saute for 10 minutes, stirring often (It's fine if vegetables brown a bit).
Add beans and liquid, tomatoes and juices, roasted pepper, and parsley. Cook, stirring often, until bubbling hot, about 10 minutes. Stir in remaining oregano, salt, and pepper.
