ingredients
3 pounds potatoes, peeled and cubed
1 teaspoon salt
water
6 tablespoons unsalted butter, cut into pieces
3/4 cup heavy cream
3/4 pound shredded smoked Gouda
salt and freshly ground white pepper
directions
Combine the potatoes, salt, and enough cold water to cover the potatoes in a saucepan. Bring to a boil over medium heat and let cook for 15 minutes or until tender. Drain well.
Add the butter, cream, and gouda to the pan. Mash the potatoes together with the other ingredients using a potato masher. If the potatoes are too thick, add additional cream.
Season as desired with salt and pepper. Serve immediately.
