Fettuccine With Herb Butter

Sometimes the simplest recipes are the best. This dish combines fettuccine pasta with fresh herbs, lots of butter, and Parmesan cheese for an easy pasta side dish.

1 pound fresh or dried fettuccine
1/2 cup butter
1/2 cup finely chopped fresh basil
1/2 cup finely chopped fresh parsley
2 cloves garlic, minced
1 tablespoon fresh lemon juice
salt, to taste
black pepper, to taste
1/2 cup freshly grated Parmesan cheese

directions

Cook the pasta as directed on package. Drain well and keep warm.

Meanwhile, melt the butter in a saucepan over medium heat. Stir in the basil, parsley, garlic, lemon juice, salt and pepper. Cook, stirring occasionally, until the herbs start to wilt a little.

Place the cooked fettuccine in a large bowl. Pour the herb-butter sauce over the hot pasta and toss to coat thoroughly. Sprinkle individual servings with grated Parmesan.

Garnish with additional fresh herbs or a drizzle of high-quality olive oil before serving.

Add toasted pine nuts or chopped walnuts for a bit of a crunch.

If using dried pasta, slightly undercook it before tossing with the sauce to prevent it from becoming mushy.

Reserve a cup of pasta cooking water in case you need to adjust the consistency of the sauce when tossing it with the cooked pasta.

You can use any pasta you wish such as spaghetti or angel hair, or shorter pasta such as elbow macaroni or rotini. You can also use this recipe with egg noodles.

Can I use dried herbs instead of fresh?

Fresh herbs make all the difference in this recipe but if you must use dried, use about 2 tablespoons each of dried basil and dried parsley in place of the fresh herbs. You may want to let the butter mixture cook longer to release the flavor of the dried herbs.
