Light 'n Creamy Vegan Angel Hair Pasta

ingredients
4 ounces angel hair pasta
1 cup vegan soy milk
3 teaspoons diced red onion
3 tablespoons diced red bell pepper
1 tablespoon instant vegetable broth mix
black pepper, to taste
2 tablespoons oil for frying (approximate)
directions
Boil pasta, then drain and set aside
Using the same pot as you used for boiling the pasta, heat up some oil and add red onion, bell pepper and black pepper. Fry for a few minutes on medium heat, or until veggies are getting slightly softer but not brown.
Add instant vegetable broth and half of the soy milk. Mix well.
Add pasta and the rest of the soy milk. Let sauce cook into pasta (about 4-5 minutes), and serve. Great with homemade garlic vegan bread and salad.
