It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

These killer kebabs can be the base for a dozen Middle-Eastern meals. Use them in pita pockets stuffed with veggies, slice them up on top of a hummus plate, or dip them in cool yogurt sauce. Excellent technique-filled recipe to ensure they're perfect every time.
1 pound ground lamb
1 pound ground beef, round or sirloin
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon baking soda
1 cup very finely grated onion
pita bread or lavash
Combine the lamb, beef, salt, pepper, baking soda, and onion in a large bowl. Mix well in a kneading style using your hands until the mixture is soft and the fat from the meat has started to soften from the heat of your hands.
Divide the meat into equal portions and form each one around a skewer about 10 inches long and 1 inch wide. Place the skewers on a baking sheet and cover lightly with plastic wrap. Place in the refrigerator for 1-2 hours.
Heat the grill to high.
Place the chilled kebabs on the grill and cook about 3 minutes per side or until browned and cooked through. Serve hot with pita bread or lavash.
