Rich in flavor and easy to prepare, this ground beef casserole boasts layers of cheese, beans, and corn tortillas, ideal for weeknight dinners.
1 pound ground beef
1 clove garlic, minced
1 small onion, diced
1 bell pepper, seeded and chopped
1 can (16 ounce size) pinto beans, rinsed and drained
1 cup picante sauce, heat level as desired
1 teaspoon ground cumin
1/2 teaspoon salt
12 corn tortillas
2 cups shredded cheese (Monterey Jack or Cheddar)
shredded lettuce
fresh chopped tomato
sour cream
Preheat the oven to 350 degrees F.
Heat a large skillet over medium heat. Add the ground beef, garlic, onion, and bell pepper. Cook, stirring, until the meat is no longer pink and the onion and pepper are soft. Drain off any excess grease.
Add the drained pinto beans, picante sauce, cumin and salt to the skillet. Bring to a simmer and let cook for 15 minutes, stirring occasionally..
Spoon some of the meat mixture into the bottom of a 9x13-inch baking dish. Top with half of the tortillas placed in an even layer, overlapping as needed to cover the bottom of the pan.
Top the tortillas with half of the remaining beef mixture. Sprinkle evenly with half the cheese. Layer the remaining tortillas over the cheese. Top with the remaining meat mixture.
Cover the pan tightly with foil. Place the enchilada casserole in the oven and bake at 350 degrees F for 20 minutes.
Remove the foil and top the dish with the remaining cheese. Return to the oven and bake, uncovered, for 5 minutes or until the cheese melts and the dish is bubbly.
To serve, top with shredded lettuce, diced tomato, sour cream, and picante sauce as desired.
To reduce the fat content, use lean ground beef or substitute with ground turkey or chicken.
For a vegetarian version, omit the meat and add extra beans and vegetables.
Add layers of sliced black olives, diced green chiles, or corn kernels for extra texture and flavor.
Try different types of cheese, such as pepper jack or queso fresco, for variety.
For a crispy top, broil the casserole for a few minutes after baking until the cheese is bubbly.
Serve the casserole with a side of Mexican rice or a fresh avocado and tomato salad for a complete meal.
Garnish with fresh cilantro, sliced green onions, or a squeeze of lime juice.
Generally, lean ground beef is preferred for this casserole to avoid excess grease but you can use a fattier one for more flavor, just make sure to drain it well.
Yes, ground turkey or chicken can be used as a leaner alternative to ground beef. You could also use a combination of ground meats if you're looking for a different flavor or texture.
Use a spicier picante sauce or add diced jalapenos or a sprinkle of crushed red pepper flakes for added heat.
While corn tortillas are traditional, flour tortillas can be used as a substitute if preferred. They tend to absorb liquid more quickly than corn tortillas so they may fall apart more easily.
Black beans or kidney beans can be used in place of pinto beans for a different flavor and texture.
No need to soak or soften the corn tortillas. They will soften during baking and absorb the flavors of the casserole.
You can assemble the casserole ahead of time and store it in the refrigerator until ready to bake. Adjust cooking time as needed if the dish is cold. Also note that the tortillas will absorb the liquid in the casserole so they may start to become overly soft the longer it sits in the fridge.
If baking the casserole straight from the refrigerator, add an additional 10-15 minutes to the covered baking time to make sure it heats through.
Yes, this casserole can be frozen. Prepare as directed, then cover tightly and freeze. Thaw overnight in the refrigerator before baking.
Reheat individual portions in the microwave for a quick meal or cover the casserole with foil and bake in the oven until heated through.
Measuring Cups and Spoons: To measure various ingredients such as the cheese, picante sauce, and cumin.
Large Skillet: To cook the ground beef, garlic, onion, and bell pepper until the meat is no longer pink and the vegetables are soft.
9x13-inch Baking Dish: For layering the ingredients of the casserole and baking it in the oven until the cheese is melted and bubbly.
Spoon: To evenly layer the meat mixture and tortillas in the baking dish.
Aluminum Foil: For covering the baking dish before baking the casserole to seal in moisture and prevent cheese from burning.
Corn and Avocado Salad: the fresh, crisp flavors of the salad will cut through the richness of the cheesy enchilada casserole, providing a nice contrast in textures and tastes.
Mexican Street Corn: the charred corn, creamy mayonnaise, and tangy lime juice will add an extra layer of Mexican flavors.
Spicy Guacamole: the creamy and spicy guacamole will add a cool contrast to the hot and cheesy casserole, creating a perfect balance of flavors and textures on your plate.
Churro Cupcakes: the sweet cinnamon flavor of churro cupcakes will be a delightful way to end your meal on a high note - the perfect combination of sweetness and spice to satisfy your taste buds.
Chipotle Avocado Crema: Creamy avocado with a hint of smoky chipotle will amp up the flavor of the dish. It's like a fancy upgrade to plain old sour cream.
Wine Pairings
Red Zinfandel: Zinfandel's bold and spicy flavors can match the heartiness of this dish. Look for one with notes of blackberry and pepper to complement the meat and cheese.
Chardonnay: A buttery Chard can add a touch of elegance to this cheesy casserole. Its creamy texture and hints of oak can balance the richness of the dish.
Merlot: If you prefer a smoother red wine, a Merlot with its soft tannins and flavors of plums and cherries can be a good companion to the layers of beans and tortillas.
Other Alcohol Pairings
Margarita: A classic margarita can provide a refreshing contrast to the cheesy and hearty flavors of the casserole. The citrusy notes can cut through the richness.
Mexican Lager: Keep it simple with a cold Mexican lager. The light and crisp nature of this beer can cleanse your palate between bites.
Tequila: Take the flavors of Mexico to the next level with a smooth tequila. The agave notes in the spirit can enhance the spices in the dish and make for a fun and festive pairing.
Non-Alcoholic Pairings
Horchata: A creamy and slightly sweet horchata can complement the bold flavors of the casserole while offering a refreshing and cooling effect.
Tamarindo Agua Fresca: Tamarind's tangy and slightly sweet flavor shines in this refreshing drink. Its acidity can cut through the richness of the dish.
Fruit-infused Iced Tea: A fruity iced tea, such as peach or raspberry, can add a touch of sweetness and fruitiness to the meal without overpowering the flavors. The tea's light and refreshing qualities make it a versatile pairing.

Love this receipt I give five star

I substituted refried beans for the whole pinto beans, didn't simmer the meat/bean mixture for quite so long, and it was VERY GOOD! Great taste, easy to put together. Next time I might put one more layer of tortillas on the bottom. I highly recommend this recipe.

I added 1 medium onion chopped to the recipe and it was very good. Easy to prepare.
I justed wanted to point out that the directions show to brown ground beef with pepper onion and garlic but the ingredients don't call for onion. Might want to change that
