ingredients

1 1/2 pound beef chuck, cut into cubes
1 large onion, chopped
1 bag (10 ounce size) frozen mixed vegetables
1 1/2 cup water
1 teaspoon salt
1 teaspoon chopped fresh thyme
1/4 teaspoon black pepper
2 cans (14.5 ounce size) beef broth
2 cans (14.5 ounce size) diced tomatoes, undrained
1 can (8 ounce size) tomato sauce
2/3 cup uncooked barley
1 package (8 ounce size) sliced fresh mushrooms

directions

Combine all the ingredients in a 6 quart or larger crock pot and mix well.

Cover the crock pot and cook on low heat for 6-8 hours or until the meat is cooked and tender. Stir well before serving.
