ingredients
2 pounds pork tenderloin, cut into 1-inch pieces
2 cans (15 to 16 ounce size) red kidney beans, rinsed and drained
1 can (8 ounce size) tomato sauce
1/4 cup canned chopped green chiles
4 large cloves garlic, minced
2 tablespoons white vinegar
5 teaspoons chili powder
5 teaspoons cumin
2 teaspoons dried oregano leaves
1 teaspoon salt
1/2 teaspoon coarse black pepper
4 flour tortillas (6 to 8-inches in diameter)
Condiments
sour cream
chopped onion
chopped tomatoes
shredded cheddar cheese
directions
Spray slow cooker and underside of lid with nonstick cooking spray. Place pork in slow cooker. Mix all ingredients, except tortillas together; pour mixture over pork. Do not stir.
Cover and cook on LOW setting 8 to 9 hours. Do not remove lid during cooking.
Place tortilla on individual serving plates. Spoon pork mixture over tortillas. Top with desired condiments.
