A simple baked casserole made with cooked chicken, Monterey Jack cheese, green chiles, sour cream, and cream of chicken soup, layered between corn tortillas.

12 cups chicken, cooked and diced
12 cups monterey jack cheese, shredded
6 cups chopped green chiles, canned
1 quart sour cream
4 cans cream of chicken soup
3 cups salsa
48 large corn tortillas
7 cups cheese, shredded
Combine the chicken, monterey jack cheese, green chiles, sour cream, cream of chicken soup, and salsa in a large bowl (or use a Dutch oven if you don't have a large enough bowl). Mix well.
Place a corn tortilla in the bottom of a pie pan. Top with 1 cup of the chicken filling, then another tortilla, then more filling, then another tortilla, more filling, and end with a tortilla. Top with one cup of shredded cheese. Repeat with remaining ingredients and pie pans.
Place pans in refrigerator and chill for 1-2 hours.
Bake at 375 degrees F for 45-60 minutes, till hot and bubbly throughout.

I made 2 dishes of this type of dish last night. One for New Years eve party and the first my husband n I sampled in the afternoon, to try it. 4 stars. Since it is a cooking for a crowd recipe I varied the amounts I put in, by guesstimating. Used smoked chicken already cooked and diced. I Added a can of black beans, and Mexican corn. It was like well at the gathering last night and we have our pan to have for today's meal, plan to use some guacamole as a garnish today. It was pretty easy except u have to plan ahead for the refrigeration time before baking, baking time is a little long also so take that into account when planning your day.

This reciepe was really a hit. I made it for my daughter for my first grandsons b-day. I changed it a bit by shreeding the chicken and instead of putting it in layers in a container I just put it in a 6x9 baking dish and just kept layering it. Awsome!! Thanks. Wayno1
