Slow Cooker Lentil Vegetable Soup

ingredients
2 1/2 cups water
1 cup chopped, shredded or sliced carrots
1 cup potatoes, peeled and cut into bite-sized pieces
3/4 cup lentils, rinsed and drained
1/2 cup chopped onion
1/2 cup chopped celery
2 bay leaves
1 teaspoon salt
1 can (14.5 ounce size) diced, canned tomatoes
1/3 cup tomato paste
2 cloves garlic, peeled and minced
directions
Stir together all ingredients in the slow cooker except the tomatoes, tomato paste and garlic.
Cook until the lentils are soft - about 5 to 6 hours on low or 2-1/2 to 3 hours on high.
Stir in the remaining ingredients. Turn off the cooker and let sit 5 minutes.
If the soup seems to thick, stir in a little water.
