Slow Cooker Roasted Vegetables

ingredients
1 pound baby carrots
4 russet potatoes, scrubbed, cut into 1" pieces
1 onion, chopped
2 cloves garlic, minced
2 tablespoons water
3 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
directions
Combine vegetables, water, olive oil, salt and pepper in a 3-4 quart crockpot and stir to combine.
Cover and cook on low for 7-9 hours or until vegetables are tender when pierced with a fork.
