2 zucchini, sliced
2 large tomatoes, sliced
2 large potatoes, sliced
2 teaspoons garlic, minced
1 1/2 ounce olive oil
1 1/2 tablespoon basil, chopped
salt and pepper, to taste
directions
Preheat the oven to 400 degrees F. Toss together all ingredients in a large mixing bowl.
Place in a lightly oiled casserole dish. Bake for 35 minutes (or until the potatoes are soft). Serve warm.

Instead of large potatoes I used small red potatoes but otherwise stuck to the recipe. Everything was done nicely and tasted very good!
