Spaghetti With Zucchini Meat Sauce

2 tablespoons extra-virgin olive oil
1 1/2 pound sweet or hot Italian sausage, removed from casings
2 green bell peppers, minced
1 cup minced onion
1 clove garlic, minced
3 medium zucchini, grated
2 cups seeded and chopped tomatoes
1/2 cup chopped jalapeno peppers
1 teaspoon fresh lemon juice, or to taste
salt
1 pound spaghetti
1/2 cup freshly grated Parmesan cheese
directions
Begin heating a large pan of salted water for the pasta.
In a Dutch oven or large saucepan, heat the oil over medium-high heat. Add the sausage, bell peppers, onion, and garlic. Saute until the meat is well browned, about 10 minutes. Drain the mixture to remove the excess fat.
Add the zucchini, tomatoes, and jalapenos. Taste and add the lemon juice, crushed red pepper flakes, and salt. Simmer for 30 minutes.
While the sauce simmers, cook the spaghetti in the boiling water until just al dente. Drain briefly.
Transfer the pasta to a large serving bowl. Add the sauce and toss. Add the cheese and toss again. Serve hot.
