Spicy Black And Red Bean Soup - CDKitchen.com

ingredients

1 tablespoon vegetable oil
1 1/2 cup chopped onion
1 1/4 cup sliced carrots
2 cloves garlic, minced
3 cups vegetable broth
2 teaspoons white sugar (optional)
1 package (16 ounce size) frozen corn
1 can (15 ounce size) kidney beans, rinsed and drained
1 can (15 ounce size) black beans, rinsed and drained
1 can (14.5 ounce size) Italian-style stewed tomatoes, drained
1 can (14.5 ounce size) diced tomatoes, drained
1 can (4 ounce size) diced green chiles

directions

Heat a skillet over medium heat. Add the oil and onion and cook until the onion is soft. Add the onion to the crock pot along with the remaining ingredients. Stir well.

Cover the crock pot and cook on high heat for one hour then reduce the heat to low and cook for 3 more hours or until the soup is heated through. Serve hot.
