It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

These time-honored sugar cookies never go out of style. This is a soft and flavorful recipe to have on hand for any occasion.
2 cups sugar
4 eggs
1 cup shortening
1 cup milk
1 teaspoon baking soda
4 teaspoons baking powder
4 cups all-purpose flour
1/2 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Grease a baking sheet.
Combine the sugar, eggs, and shortening in a mixing bowl. Beat on medium speed with an electric mixer until fluffy. Turn the mixer to low speed and add the milk, scraping down the sides as needed.
In a bowl, stir together the baking soda, baking powder, and flour.
Add the flour, a little at a time, to the egg mixture, mixing well after each addition. Add the vanilla.
Drop the cookie dough by teaspoons onto the prepared baking sheet. Place in the oven and bake at 350 degrees F until just lightly golden brown (8-12 minutes). Remove from the oven and let cool on the baking sheet for a few minutes then transfer to a cooling rack.
Store the cooled soft sugar cookies in an airtight container at room temperature. These also freeze well.
