1 cup cornmeal
1/2 teaspoon salt
boiling water
1 tablespoon salad oil
directions
Add the boiling water to the cornmeal and salt to make a firm mixture.
Shape into cakes and place on baking sheet greased with bacon fat or salad oil.
Bake at 375 degrees F for 10-20 minutes.

My great grandmother, who was raised by her "mammy" in the state of Georgia, learned to make Corn Pones just like the recipe above. The only difference was after making the pones into hamburger sized-shapes she would deep fry the pones in oil until golden brown. DELICIOUS!
