ingredients
2 cups low-sodium vegetable broth
1 pound kale, carefully washed and stems removed
1/4 teaspoon salt
1/4 teaspoon cumin
1 teaspoon brown sugar
1 small Granny Smith apple, cored and chopped
1/2 cup low-fat plain yogurt
directions
Bring broth to a boil in a large saucepan. Add kale, cover, and simmer 8 minutes. Blend cooked kale with a little of the liquid until smooth. Return to the pan with the rest of the liquid.
Season with salt, cumin, and brown sugar. Stir in chopped apple, and simmer another 8 minutes. Remove from heat and stir in the yogurt.
