ingredients
1 cup oil
1 1/2 cup sugar
3  egg yolks
1 cup grated carrots
1 cup grated beets
2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1 teaspoon cinnamon
1/2 cup chopped nuts
3  stiffly beaten egg whites
directions
Beat together oil, sugar, and egg yolks; add carrots and beets. Mix dry ingredients together with nuts and blend in. Fold in egg whites. 
 Grease and flour loaf pan (1 large or 2 small). Bake at 350 degrees F for one hour.
