ingredients
3/4 cup hot water
4 tablespoons soft butter
3 tablespoons light brown sugar
2 teaspoons salt
2 cups prepared kumquats
1 1/2 cup unbleached white flour
1/2 teaspoon mace
2 packages dry yeast
2 cups unbleached white flour
directions
In a mixing bowl, combine hot water, butter, salt and sugar, stirring to melt the butter and to dissolve the sugar and salt.
In a mixing bowl, combine the kumquats and 1-1/2 cups flour. Allow the mixture to sit for 30 minutes.
In a large mixing bowl, sift together the mace, yeast and 2 cups flour.
To the flour mixture, add first the kumquat mixture, stirring, and then the liquid. Stir the batter well. Add, by the half-cupful, the additional 2 cups flour, stirring in thoroughly each portion. The dough will be sticky.
Put the bowl in a warm place and allow the dough to rise until doubled in bulk.
Stir the dough down and spoon it into buttered 8-inch loaf pans. Allow it to rise again.
Put the pans into a cold oven. Set heat for 400 degrees F and bake the bread at this temperature for 15 minutes.
Reduce the heat to 325 degrees F and continue to bake the bread for 35 minutes, or until it sounds hollow when tapped.

Just made this and LOVED it! I think I understand why the other person was confused. The second measure of flour (2 cups) is mixed with the yeast and mace and then added "by the half-cupful". If you read it slowly it makes sense so they must have not read carefully. Also, mine was done fine in the middle so maybe their oven temp was off or their kumquats were juicier? Anyway, I really liked this recipe.

Love yeast breads and was looking forward to trying this one since I had a bunch of kumquats. However, the recipe is confusing. Ingredients call for 3 1/2 cups of flour but directions make it sound like it takes 5 1/2 cups. Says to cook it in loaf pan(s). I cooked it on loaf pan per instructions and it never got done in the middle. It was pretty but just not done and not very tasty. Sorry :(
