ingredients
2 1/4 cups all-purpose flour
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 eggs
1/2 cup firmly packed brown sugar
1/3 cup melted butter
2/3 cup apple cider or apple juice
1 1/2 cup seeded and chopped green tomatoes
3/4 cup chopped walnuts
directions
Preheat the oven to 350 degrees F. Grease and flour a standard size loaf pan.
In a bowl, sift together the flour, baking powder, salt, baking soda, cinnamon, and ginger.
In a large bowl, whisk together the eggs, brown sugar, melted butter, and apple cider until smooth. Stir in the flour mixture and mix until just blended (do not overmix).
Fold the the green tomatoes and walnuts.
Place the batter in the prepared loaf pan. Place the pan in the oven and bake at 350 degrees F for 55 minutes or until a wooden pick inserted in the middle of the loaf comes out clean.
Remove the pan from the oven and place on a wire rack to cool for 10 minutes. Remove the bread from the pan on and place on the rack to cool completely.
Store the bread tightly wrapped in plastic at room temperature or in the refrigerator for up to 3 days.
