ingredients

4 cups white flour (sifted)
1 teaspoon salt
3/4 cup oil
1 cup water
3 eggs (lightly beaten)

directions

Make a very soft dough with flour, eggs, salt and water, kneading well. Divide into balls, cover with a damp cloth and leave to stand for 30 minutes.

Spread out each ball on a well-oiled table top, pulling the edge gently with the hands to stretch it out as wide and as thin as possible, as for a strudel.

Dust the surface with flour and fold over and over to make a fan. Roll up the pleated dough to make a curled ball and leave to rest for 15 minutes.

Use your hands to pat the ball into circles about 6 inches in diameter, or use a rolling pin.

Oil a griddle or heavy frying pan and cook the bread, turning so that it is golden brown on each side.

Serve hot with dal or curries.
