Easy Pepperoni Loaf

ingredients
1 loaf frozen bread dough, thawed
1 cup finely chopped pepperoni
1 large egg
1/2 cup grated Parmesan cheese
1 teaspoon oregano
1/2 cup green bell pepper, diced
1/2 cup onion, diced
1 tablespoon olive oil
1 cup shredded mozzarella cheese
cayenne pepper, optional
directions
Thaw bread dough and let rise according to package directions.
Meanwhile, prepare filling: Finely chop or grind pepperoni. Beat together egg, Parmesan cheese and oregano. Saute peppers and onion in olive oil until limp. Have ready the Mozzarella cheese.
Roll out prepared dough to a 9- x 12-inch rectangle. Spread egg mixture evenly over the dough. Sprinkle ground pepperoni down center of rectangle lengthwise. Top with pepper and onion mixture and then Mozzarella cheese.
Fold over sides of dough to cover the filling. Moisten seam and seal, then tuck in the ends securely. Prick top of roll with fork or make small slits with thin sharp knife.
Place on lightly greased cookie sheet with 1-inch sides. Cover with clean tea towel and let rise for about 1 hour.
Bake in a preheated 375 degrees F oven for 25 to 30 minutes or nicely browned.
Brush loaf with butter or any drippings in pan. Sprinkle with cayenne pepper if desired. Slice to serve while warm.
