ingredients

1 package dark raisins
4 teaspoons baking soda
2 cups boiling water
2 cups sugar
4 tablespoons cooking oil
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
4 cups all-purpose flour
ground nuts, if desired

directions

NOTE: You'll need 3 empty coffee cans (1 pound size).

Mix raisins, soda, and boiling water the night before baking. Cover and let stand on counter overnight. Next day add remaining ingredients and mix well.

Spray coffee cans with cooking spray. Divide dough equally amongst the cans.

Bake in a preheated 350 degrees F oven for approximately 1 hour or until toothpick comes out clean. Cool.
