Crustless Pecan Pie

For some people, it's the crust that matters in a pie. If you're not one of them then we highly recommend this rich, crustless pecan pie.

ingredients
1/2 cup melted butter
1 1/2 cup light brown sugar
3 tablespoons all-purpose flour
1 cup milk
1 teaspoon vanilla extract
2 eggs
1 cup chopped pecans
directions
Preheat the oven to 325 degrees F.
Combine the melted butter and brown sugar in a mixing bowl. Beat on medium speed with an electric mixer until combined. With the mixer running, sprinkle the flour into the bowl and mix for 1 minute.
With the mixer running, slowly add the milk and eggs and beat until smooth. Add the vanilla and beat for 1 minute.
Stir the pecans in by hand.
Transfer the pecan pie filling to a pie pan. Place in the oven and bake at 325 degrees F for 45 minutes or until the filling is almost set.
Remove the pie from the oven and let cool on a wire rack until it reaches room temperature. Serve the pie at room temperature for best results (it can also be served chilled), with ice cream or whipped cream.
