It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

If you're in the mood for something a little different and a lot delicious, why not try these ensaymada with potato? You won't believe how tasty they are.

2 tablespoons sugar
2 tablespoons yeast
1 cup warm water
2 egg yolks, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
4 whole eggs, slightly beaten
1 cup sugar
1/2 cup mashed potato
1/2 cup evaporated milk
6 1/2 cups all-purpose flour
1 teaspoon salt
1 cup butter, melted
grated cheese
Dissolve sugar and yeast in warm water. Let stand for 10 minutes.
Blend egg yolks, eggs, sugar, potatoes and milk. Add to yeast mixture. Add in flour and salt then knead, adding butter a little at a time (leave 1/3 cup for greasing during make-up) until smooth and elastic. Let rise until doubled.
Punch down dough and divide into equal pieces. Form each piece into a ball then roll out to 1/8" thick. Sprinkle cheese and roll in jelly roll fashion.
Form into a coil and place in greased ensaymada molders (or muffin pans). Let rise for another hour then bake at 375 degrees F for 10-13 minutes.
Remove from the oven and top with additional cheese while hot, if desired.
